Ingredients for Zhajiangmian
Pork 400g | Sweet Bean Sauce 2 tablespoons |
Dark Soy Sauce 1 tablespoon | Oyster Sauce 1 tablespoon |
Granulated Sugar 50g | Salt |

Recipe for Zhajiangmian

Step 1
The pork in the Zhajiang is minced directly when purchased.
Step 2
Prepare diced shiitake mushrooms, green onions, and sauce.
Step 3
Prepare a bowl of sauce, including sweet bean sauce, chicken powder, salt, sugar, and oyster sauce.
Step 4
Then heat up the oil in a pan, fry the sauce in the Zhajiang until fragrant.
Step 5
After the oil is hot, add a little bit of green onion and ginger, then add the minced pork and stir-fry.
Step 6
After the meat is cooked, add all the green onions, ginger, and diced shiitake mushrooms to the pan.
Step 7
Be sure to stir-fry evenly.
Step 8
After stir-frying for about half a minute, pour the prepared sauce into the minced meat.
Step 9
After pouring and stir-frying, add half a bowl of water. Then simmer on low heat for a while until the sauce thickens.
Step 10
After the sauce thickens slightly, add a little bit of white wine.
Step 11
When the sauce is thickened to this consistency, then heat up another pot of water.
Step 12
Shred some cucumber, and when the water is boiling, add enough handmade noodles for yourself. (If you like carrots and pickled vegetables, you can also prepare them on the side.)

Once the water is boiling, add the appropriate amount of handmade noodles. (If you are unsure of how many noodles to cook, you can prepare a bowl and place the noodles in it. Handmade noodles are different from regular noodles as they do not expand when cooked.)
Step 14
Once the noodles are cooked, remove them and top with the prepared Zhajiang sauce and cucumber shreds. Enjoy your meal, and it’s even better with some pickled vegetables on the side.
