Steps to Make Earl Grey Scones

Step 1
Mix 50g eggs with 65g whipping cream and refrigerate for later use
Step 2
Mix 220g low-gluten flour, 40g caster sugar, 2g salt, 6g baking powder, 3g Earl Grey tea powder, and 60g butter together
Step 3
Mix well and knead into fine crumbs
Step 4
Pour in the chilled liquid mixture and fold until no dry powder remains
Step 5
Divide the dough in half, roll it out to about 2.5cm thick, and repeat steps 3-4
Step 6
Wrap the dough in plastic wrap and refrigerate for about 30 minutes
Step 7
After refrigeration, use a mold to press out shapes and place them on a baking tray
Step 8
Brush with egg wash, sprinkle with sliced almonds for decoration
Step 9
Preheat the oven to 185°C (top heat) and 170°C (bottom heat), then bake for 25 minutes
