Ingredients for Tiao Tou Gao
Water-milled glutinous rice flour 120g | Glutinous rice flour 60g |
White sugar 20g | Warm water 1/4 rice bowl |
Lard 10g | Rose bean paste filling Moderate amount |
Edible oil Moderate amount |
Steps to Make Tiao Tou Gao

Step 1
Mix all ingredients except the bean paste filling, stir well, add warm water, knead into a dough. Different brands of glutinous rice flour and glutinous rice flour have different water absorption rates, so the amount of water may not necessarily be 1/4 bowl. Slowly add water to avoid the dough being too thin.
Step 2
Steam the dough in a pot until cooked, the whole process takes 30 minutes, start the timer when steam starts to rise, steam over low heat.
Step 3
After steaming, let the dough cool, apply a little edible oil on the cutting board, roll the dough thinly with a rolling pin into a square shape. The dough may be slightly sticky, so wearing disposable gloves is recommended.
Step 4
Cut the rolled dough into suitable sized pieces, place an appropriate amount of bean paste filling in the center. Fold the sides inwards tightly after folding the dough in half with the filling.
