Ingredients for Yellow Lanzhou Leek Dumplings

Three Dao Yellow Leeks 500g Minced Meat 400g
Eggs 2 Cooking Wine 1 tbsp
Light Soy Sauce 2 tbsp Dark Soy Sauce 1/3 tbsp
Salt As needed Sugar 1 tbsp
Sesame Oil 1 tbsp Pork 1 tbsp
Eggs 2 Ground Ginger 5g
Star Anise Powder 5g Peppercorn Oil 1/5 tbsp
Rapeseed Oil As needed Maggi Chicken Essence 5g
Vinegar and Chili Oil As needed

Yellow Lanzhou Leek Dumplings Recipe

Clean and drain the Three Dao Yellow Leeks, also known as yellow leeks.

In a bowl, combine minced meat, eggs, salt, cooking wine, light soy sauce, dark soy sauce, sugar, star anise powder, ground ginger, peppercorn oil, ground pepper, and Maggi chicken essence. Mix everything in a clockwise direction until the egg mixture is completely absorbed into the meat.

Heat rapeseed oil and pork lard in a pan.

Once the oil is hot, reduce the heat and add chopped scallions. Fry until golden and fragrant.

Pour the fried scallions into the meat mixture.

Finely chop the yellow leeks and mix with some sesame oil or rapeseed oil that has been boiled and cooled, making the leek leaves greener.
