Ingredients for Yellow Lanzhou Leek Dumplings
Three Dao Yellow Leeks 500g | Minced Meat 400g |
Eggs 2 | Cooking Wine 1 tbsp |
Light Soy Sauce 2 tbsp | Dark Soy Sauce 1/3 tbsp |

Yellow Lanzhou Leek Dumplings Recipe

Step 1
Clean and drain the Three Dao Yellow Leeks, also known as yellow leeks.
Step 2
In a bowl, combine minced meat, eggs, salt, cooking wine, light soy sauce, dark soy sauce, sugar, star anise powder, ground ginger, peppercorn oil, ground pepper, and Maggi chicken essence. Mix everything in a clockwise direction until the egg mixture is completely absorbed into the meat.
Step 3
Heat rapeseed oil and pork lard in a pan.
Step 4
Once the oil is hot, reduce the heat and add chopped scallions. Fry until golden and fragrant.
Step 5
Pour the fried scallions into the meat mixture.
Step 6
Finely chop the yellow leeks and mix with some sesame oil or rapeseed oil that has been boiled and cooled, making the leek leaves greener.
Step 7
Add the chopped yellow leeks to the meat mixture.
Step 8
Wear disposable gloves and mix the meat mixture and chopped leeks thoroughly.
Step 9
Use store-bought dumpling wrappers.
Step 10
Scoop a spoonful of filling and wrap a dumpling.
Step 11
Ensure all dumplings are of uniform size.
Step 12
Boil the dumplings in water for 10 minutes, adding water three times in between.
Step 13
Plate the cooked dumplings.
Step 14
Prepare a dipping sauce with vinegar, light soy sauce, and chili oil to enjoy with the dumplings.
