Ginger 1 piece | Sichuan Peppercorns a few |

Recipe for Sweet and Spicy Green Onion Belt Fish

Step 1
Heat oil in three layers, stir-fry Pixian Doubanjiang until red oil is released.
Step 2
Filter out solids from Pixian Doubanjiang, reserve red oil.
Step 3
Heat up oil (half red oil, half cooking oil), stir-fry ginger slices, then add Sichuan peppercorns.
Step 4
Stir-fry dried chilies until fragrant, then briefly stir-fry scallion whites.
Step 5
Add fried belt fish and stir-fry.
Step 6
Drizzle in sauce while turning the wok, until thickened.
Step 7
Sprinkle with scallion greens before serving, mix well and serve.
