Recipe for Thai-style Stir-fried Chicken

Step 1
Cut the chicken into cubes, marinate with cooking wine, salt, and black pepper for ten minutes. (Marinating is optional! I just think marinated meat tastes better).
Step 2
Peel the garlic, and pound it together with the chili in a mortar until mashed.
Step 3
Heat 2-3 tablespoons of oil in a pan, sauté the mashed garlic and chili until fragrant.
Step 4
Add the yardlong beans and diced chicken, stir-fry until the chicken changes color, then add fish sauce, soy sauce, oyster sauce, and sweet soy sauce for seasoning. Continue stir-frying for two to three minutes until the chicken is completely cooked.
Step 5
Add the holy basil, stir-fry until the basil wilts.
Step 6
Serve with a fried egg and white rice.
