Recipe for Stir-Fried Horse’s Tooth Amaranth

Horse’s Tooth Amaranth 300g (washed and dried, tender leaves preferred) Grandma’s Hometown Cold-Pressed Rapeseed Oil 18ml (recommend temperature-controlled rapeseed oil, bringing out pure oil fragrance) 3 cloves of garlic (sliced, enhances aroma and flavor) 3g salt, 2g sugar (balances slight bitterness of the vegetables)

1. Blanch the Horse’s Tooth Amaranth in boiling water briefly, then remove and drain the water. This step is to remove the bitter taste of the Horse’s Tooth Amaranth.

2. Heat the pan with cold oil, pour in Grandma’s Hometown Cold-Pressed Rapeseed Oil, heat over medium-low heat until fine waves appear on the oil surface (about 60% hot).
