Recipe for Stir-Fried Garlic Sprouts with Chinese Cured Meat

Step 1
Brush and wash the Chinese cured meat with hot water, then soak for half an hour to soften the skin.
Step 2
Slice the soaked Chinese cured meat slightly thick and as evenly as possible.
Step 3
Trim the ends of the garlic sprouts, wash them, and cut them into sections at a 30-degree angle to increase the surface area for better flavor absorption during cooking.
Step 4
Wash the red chili pepper, remove the stem and seeds, and shred it.
Step 5
Bring a pot of water to a boil and add a few drops of Xiaozha cabbage seed oil.
Step 6
Blanch the garlic sprouts for 15 seconds, then remove and immerse in cold water to cool before draining.

Boil the Chinese cured meat in the hot water for about 4 minutes, then remove and drain.

Heat a cast iron pan and add Xiaozha cabbage seed oil.

Add the boiled Chinese cured meat, stir-fry briefly, then drizzle cooking wine along the edges of the pan, stir-fry over medium-low heat, and then add light soy sauce to mix well.
