Recipe for Scrambled Eggs with Green Onions

Step 1
Peel a green onion and crack 5 eggs. If you are cooking for yourself, 3 or 4 eggs are enough, but I prepared a bit more for leftovers.
Step 2
Crack the eggs into a bowl and start whisking.
Step 3
Add a little salt while whisking. You won’t need to add more salt while cooking later. If you don’t like it too salty, you can add a bit more salt while cooking the dish.
Step 4
Whisk the eggs until they are well beaten. Then, chop the green onions into small pieces.
Step 5
Heat some oil in a pan, not too much.
Step 6
Once the oil is hot, pour the egg mixture into the pan. I especially love seeing the eggs take shape like this.
Step 7
When the bottom of the egg solidifies and there is still some liquid on top, add the chopped green onions into the pan. Stir fry back and forth.
Step 8
Once the eggs are cooked through, you can remove them from the heat. If you feel like it needs more flavor, you can add a bit of chicken essence.
Step 9
Serve on a plate. I feel like these scrambled eggs paired with steamed buns are the perfect combination.
