Recipe for Eggplant Stir-Fried Chicken Shreds

Step 1
Prepare the ingredients.
Step 2
Wash and cut the chicken breast into shreds, mix with Maggi chicken powder and starch, marinate for 10 minutes.
Step 3
Wash the eggplant, peel and cut into shreds, wash the carrot and cut into shreds.
Step 4
Heat oil in a pan until 60% hot, sauté chopped scallions and minced garlic, add chicken shreds and stir-fry until cooked, then set aside.
Step 5
Heat a little oil in the pan, stir-fry the carrot shreds and eggplant, add light soy sauce and Maggi chicken powder, stir-fry until softened.
Step 6
Finally, add the chicken shreds back to the pan, stir-fry until all ingredients are cooked. Marinating the chicken shreds with Maggi chicken powder before cooking will enhance the flavor and taste of the dish.
