Recipe for Spinach Soup

Step 1
To enhance the flavor of the soup, you need plenty of ingredients. The quantities listed are for one serving, which was enough for me for two meals.
Step 2
Separate the egg white and yolk of the salted duck egg. Crush the yolk into a paste, chop the garlic, slice the Chinese sausage, marinate the shrimp with ground pepper and cooking wine, blanch the spinach for 30 seconds, then drain the excess water.
Step 3
Brush oil in the pot, sauté the garlic until fragrant. Add the Chinese sausage and stir-fry until the oil is released, then add the egg yolk and stir-fry until it bubbles. ⚠️ Frying the garlic until golden brown using the fat from the meat will make it taste even better.
Step 4
Add the egg white and century egg, stir-fry well, pour in hot water, bring to a boil over high heat, then reduce to medium heat and simmer for 15 minutes. The steps for the broth are now complete.
Step 5
Cook the shrimp until they change color, then add the spinach. Stir quickly to combine. ⚠️ It’s basically well-seasoned, you can add a little salt and pepper at this step if needed.
