Recipe for Spicy Stir-Fried Pork Ribs

Step 1
Coat the pork ribs with flour, wash off the blood, and dry them without blanching. This method helps to retain the freshness of the meat.
Step 2
Heat a pan with oil and add dried chili peppers, cumin, dried tangerine peel, hawthorn slices, Sichuan peppercorns, and bay leaves. Stir-fry until fragrant.

Add the pork ribs and stir-fry.

Add spring onions, ginger, and garlic, and continue stir-frying.

Add all the seasonings and continue stir-frying.

Stir until the color changes, then add hot water to cover the ribs. Cover and simmer on low heat for about 25 minutes.
