Recipe for Spicy Stir-fried Eggplant

Step 1
Prepare all the ingredients, add more garlic if you like, you can also omit the pork belly;
Step 2
Cut the eggplant into strips, sprinkle with salt, marinate for 10 minutes, rinse, and squeeze out excess water;
Step 3
Heat oil in a pan, stir-fry the eggplant until slightly charred on the surface, then set aside;
Step 4
Use the remaining oil, add the green pepper, a little salt, stir-fry until partially cooked, then set aside;

Add the pork belly and stir-fry until it changes color;
Step 6
Add the bird’s eye chili, half of the garlic, and dark soy sauce, stir-fry until fragrant;

Add the green pepper, eggplant, light soy sauce, oyster sauce, and salt, stir-fry until well combined;

Add the remaining garlic, stir-fry until well combined;
