Ingredients for Spicy Chicken
Chicken Thigh (with bone) 2 pieces | Potato 1 |
Ginger a small piece | Salt to taste |
Light Soy Sauce 3 tbsp | Dried Chili to taste |
Scallions to taste | Sichuan Peppercorns to taste |
Fresh Sichuan Peppercorns to taste | Pork Fat to taste |
Vegetable Oil to taste | Vinegar to taste |
Recipe for Spicy Chicken

Step 1
Prepare green chilies, bird’s eye chilies, scallions, ginger
Step 2
Cut the potato into strips, boil in water for 3 minutes, add salt
Step 3
Fresh Sichuan peppercorns, dried Sichuan peppercorns, dried chilies to taste
Step 4
Half a chicken thigh with bone, soak in salted warm water for 20 minutes (to remove blood and gamey flavor)
Step 5
Stir-fry the chicken for 2 minutes to remove excess moisture, set aside
Step 6
Heat pork fat and vegetable oil in a pan, let it cool slightly before adding the seasonings
Step 7
Stir-fry dried chilies, fresh Sichuan peppercorns, dried Sichuan peppercorns, ginger, then add the chicken, green chilies, bird’s eye chilies, scallions, and finally, the potatoes for a final stir-fry
