Ingredients for Spicy Chicken

Chicken Thigh (with bone) 2 pieces Potato 1
Ginger a small piece Salt to taste
Light Soy Sauce 3 tbsp Dried Chili to taste
Scallions to taste Sichuan Peppercorns to taste
Fresh Sichuan Peppercorns to taste Pork Fat to taste
Vegetable Oil to taste Vinegar to taste

Recipe for Spicy Chicken

Prepare green chilies, bird’s eye chilies, scallions, ginger

Cut the potato into strips, boil in water for 3 minutes, add salt

Fresh Sichuan peppercorns, dried Sichuan peppercorns, dried chilies to taste

Half a chicken thigh with bone, soak in salted warm water for 20 minutes (to remove blood and gamey flavor)
