Method for Cold Mixed Three Threads

Step 1
Crack three eggs into a bowl, add a pinch of salt and beat until fluffy.
Step 2
Wash and julienne the cucumber and set aside.
Step 3
Peel and julienne the carrot, and wash and julienne half a sheet of bean curd skin.
Step 4
Heat oil in a pan, pour a thin layer of beaten egg, and cook over low heat until golden brown on both sides.

Cut the cooked egg into thin strips and set aside.
Step 6
Boil a pot of water, blanch the carrot and bean curd skin for 1-2 minutes, then remove and drain.
