Polish Seeds 100g Dough: Water 325g
T65 Flour 450g T170 Flour 50g
Salt 10g Additional:
Water 50g Dry Yeast 1.5g
Seeds: Chia Seeds 20g
Black and White Sesame Seeds 30g

Soak 20g chia seeds in 50g water. Mix the dough ingredients and let it sit for over an hour. Then add the Polish seeds and yeast and knead until smooth. Gradually add 50g water until dough is elastic. Add in all the seeds and mix well. (Dough temperature 23 degrees)
