Recipe for Salted Duck

Step 1
Salt, Sichuan Peppercorn, Star Anise, Cinnamon

Heat and fry until fragrant
Step 3
Pat dry the duck, evenly apply the fried salt mixture both inside and outside

Place in a plastic bag, refrigerate and marinate for 48 hours
Step 5
Rinse the duck, scald the surface with boiling water, then rinse with cold water to tighten the skin, repeat twice

Add ginger and green onion into water, place the duck in the water with the breast facing down

Bring to a boil for the first time, skim off any impurities, cover and simmer for 20 minutes

After 20 minutes, bring to a boil for the second time, cover and simmer for another 20 minutes

Repeat the same process for the third time
Step 10
Once done, remove and let it cool
Step 11
Slice and serve on a plate
