Ingredients for Xiaomi Guoba
Xiaomi (small glutinous millet) 120g | Flour 100g |
Cornstarch 50g | Baking powder 5g |
Egg 1 | Black pepper powder 2g |
Salt, Sugar 2g each | Cooking oil As needed |
Steps to Make Xiaomi Guoba

Step 1
Wash the Xiaomi, soak in water (1 cm above Xiaomi) for 30 minutes, then steam for 20 minutes. Take out when done steaming.
Step 2
Add all the seasonings, stir well while hot, use a spoon to press down and make the millet finer.
Step 3
Sift and mix the various flours, wait for the Xiaomi to cool to near body temperature, then add the mixed flours and egg, knead well.
Step 4
Spread a little cooking oil on the cutting board and rolling pin to prevent sticking.
Step 5
Place the flour dough (or rice ball) on the cutting board, roll it into a thin sheet with the rolling pin. The thinner it is, the crisper it will be. Trim irregular edges, poke small holes with toothpicks, then cut the rolled dough into small square pieces.
Step 6
Heat cooking oil in a pan over low heat until 80% hot, slowly add the cut flour slices, fry on low heat for two minutes, then turn off the heat. The oil will still be boiling. When the oil stops boiling, remove the fried Guoba and let it cool before eating.
