Instructions for Bean and Pork Dumplings

Step 1
Soak Sichuan peppercorns, star anise, and bay leaves in hot water, along with some spring onions, ginger, and cinnamon. Meanwhile, chop the minced pork.
Step 2
Chop the store-bought minced pork a bit more, while adding some soy sauce gradually. The meat will darken and achieve a uniform color.
Step 3
Once the pork is chopped enough, place it in a bowl.
Step 4
Slowly pour in the Sichuan peppercorn-infused water while stirring in one direction. The mixture should not be too watery. Once mixed, set it aside to marinate, preferably in the refrigerator, according to personal preference.
Step 5
Wash the green beans and steam them until tender. Test for doneness after steaming for about 10 minutes. Do not overcook.
Step 6
Once the green beans are steamed, allow them to cool and then chop them finely.
Step 7
After cooling a bit, chop the green beans on a cutting board.
Step 8
Mix the chopped green beans into the minced pork mixture, add seasoning, and mix well.
Step 9
Use ready-made dumpling wrappers. Wet the edges with some water before filling with the meat mixture for better sealing.
Step 10
Boil the dumplings until they float to the top, stirring gently so as not to break the skin. Add a bit of cold water a few times during cooking. Once the dumplings puff up a bit, cook for a little longer before serving.
