Cream Cheese 350g | Caster Sugar 90g |

Instructions for Original Basque Cheesecake

Step 1
Soften the cream cheese until it’s a toothpaste-like consistency and mix it until smooth. You can soften it at room temperature or in the microwave.
Step 2
Add caster sugar and cornstarch, mix well. If you don’t like it too sweet, you can reduce the sugar to 75g.
Step 3
Gradually add room temperature eggs, making sure to mix well before adding the next one.
Step 4
Add room temperature whipping cream, mix well. If it’s just taken out of the refrigerator, you can heat it in the microwave for a few seconds.
Step 5
Line a 6-inch mold with parchment paper.

Sift the cheese mixture.
Step 7
Sifting the cheese mixture will make it smoother, but if you find it troublesome, you can skip this step.
Step 8
Place in a preheated oven on the lowest rack, with both top and bottom heat at 210 degrees Celsius, and bake for 28 minutes. Check the color midway, and if you’re satisfied, cover with foil.
Step 9
After cooling, cover with cling film and refrigerate for at least 4 hours.
