Ingredients for North African Eggs
5 eggs | 2 tomatoes |
half a carrot | 1/4 onion |
half a green bell pepper | half a yellow bell pepper |
half a bell pepper | 1 bowl of water |
some olive oil | 1.5 teaspoons of salt |
some black pepper | 1 teaspoon of cumin |
1 teaspoon of caraway | 1-2 tablespoons of tomato sauce |
2 cloves of garlic | some cilantro |
Steps for Making North African Eggs

Step 1
Dice all vegetables, mince the garlic and set aside
Step 2
Pour olive oil into a skillet, sauté the onion and garlic first
Step 3
Then add carrots and bell peppers and sauté until fragrant
Step 4
Add diced tomatoes and stir until soft
Step 5
Then add tomato sauce, cumin, caraway, and water, simmer for 5 minutes to blend all flavors and partially cook the vegetables
Step 6
Once the sauce thickens, turn off the heat, make some holes in the mixture and crack the eggs into the holes, cover with a lid, continue to simmer on low heat for 5 minutes until the eggs are cooked
Step 7
Turn off the heat, sprinkle with crushed black pepper and cilantro leaves and serve
