Ingredients for Mushroom and Chicken Stew Rice
Chicken thigh fillet 2 pieces | Dried mushrooms (soaked) 5-6 pieces |
Rice 150g | Scallion and ginger To taste |
Soy sauce To taste | Seasoning sauce 2g |
Oyster sauce 2 tablespoons | Mushroom soaking water To taste |
Recipe for Mushroom and Chicken Stew Rice

Step 1
Soak dried mushrooms in warm water for 1 hour (keep the mushroom soaking water! Adds flavor to the rice) Soak rice for 40 minutes, then drain and set aside
Step 2
Spread rice in a pot, add mushroom water until it covers the rice by 1cm, cover and simmer over low heat for 20-25 minutes.
Step 3
Add a little oil in a pot, place chicken thighs skin side down, and slowly pan-fry over low heat.
Step 4
Sear the surface of the chicken thighs until golden brown, then remove and slice into pieces.

Cut the soaked mushrooms and chicken thighs into suitable pieces, or leave them whole.

Return the chicken and mushrooms to the pot, stir-fry until fragrant. Then add a sauce made with 1/3 seasoning sauce, oyster sauce, soy sauce, and some water.
Step 7
