Mushroom and chicken stewed rice. One pot of meat and vegetable rice, so delicious that you’ll want to lick the bottom of the pot.

Ingredients for Mushroom and Chicken Stew Rice

Chicken thigh fillet 2 pieces Dried mushrooms (soaked) 5-6 pieces
Rice 150g Scallion and ginger To taste
Soy sauce To taste Seasoning sauce 2g
Oyster sauce 2 tablespoons Mushroom soaking water To taste

Recipe for Mushroom and Chicken Stew Rice

Step 1 - Soaking dried mushrooms and rice

Step 1

Soak dried mushrooms in warm water for 1 hour (keep the mushroom soaking water! Adds flavor to the rice) Soak rice for 40 minutes, then drain and set aside
Step 2 - Cooking rice with mushroom water

Step 2

Spread rice in a pot, add mushroom water until it covers the rice by 1cm, cover and simmer over low heat for 20-25 minutes.
Step 3 - Pan-frying chicken thighs

Step 3

Add a little oil in a pot, place chicken thighs skin side down, and slowly pan-fry over low heat.
Step 4 - Searing chicken thighs

Step 4

Sear the surface of the chicken thighs until golden brown, then remove and slice into pieces.
Step 5 - Cutting mushrooms and chicken thighs

Step 5

Cut the soaked mushrooms and chicken thighs into suitable pieces, or leave them whole.
Step 6 - Cooking chicken and mushrooms

Return the chicken and mushrooms to the pot, stir-fry until fragrant. Then add a sauce made with 1/3 seasoning sauce, oyster sauce, soy sauce, and some water.
Step 7 - Assembling and finishing the dish

Arrange the cooked ingredients on top of the rice, cover and simmer for another 5-8 minutes. Garnish with chopped scallions. Oyster sauce from 上grocery, 0 additives, 0 fat, enhances the flavor without guilt.
