Ingredients for Mushroom and Black Chicken Soup
Black Chicken 1 whole | Assorted Mushrooms 1 pack |
Tangerine Peel a small piece | Goji Berries, Red Dates as needed |
Black Pepper 1/2 tablespoon | Salt 1 tablespoon |
Codonopsis, Angelica, Astragalus as needed | Lotus Seeds as needed |
Cooking Wine 1 tablespoon |
Recipe for Mushroom and Black Chicken Soup

Step 1
Clean the black chicken, place in a pot of cold water, add a couple of sections of scallions and some slices of ginger. Blanch with a tablespoon of cooking wine. Boil for two minutes. Remove and rinse with hot water to clean off any scum. Set aside.
Step 2
Prepare a packet of stewed chicken spices, codonopsis, angelica, astragalus as needed, a small piece of tangerine peel, red dates, and goji berries as needed. Add a couple of sections of scallions and some slices of ginger. Set aside.
Step 3
Soak the lotus seeds in water for an hour. Set aside.
Step 4
Prepare your favorite mushrooms, such as caterpillar fungus, shiitake mushrooms, seafood mushrooms, and black truffle mushrooms.
Step 5
In a clay pot, add the chicken pieces, the prepared stewed chicken spices, codonopsis, angelica, astragalus, red dates, and goji berries. Add boiling water. Bring to a boil over high heat for five minutes, remove the scallion sections, reduce heat, cover and simmer for forty minutes.
Step 6
Add the mushrooms, season with black pepper and salt, and simmer for another twenty minutes.
