Steps to Make Mulberry Walnut European Bread

Step 1
Put all ingredients into the chef machine
Step 2
Mix at high speed until smooth (takes a bit of time due to the large amount of water)

Add soaked dried mulberries and walnuts
Step 4
Mix slowly until combined
Step 5
Let it ferment in a 30°C environment for 60-80 minutes

Fold it halfway through the fermentation process

After fermentation, divide into two portions, each around 380g, and fold them like shaping a stick

Place them in a fermentation cabinet dusted with flour

Ferment at 30°C until 80% full (or refrigerate for at least 12 hours)

After fermentation, pour it on an oiled cloth, and cut into pieces

Preheat the oven to 240°C (top) and 220°C (bottom), spray with steam for 5 seconds after putting it in the oven, then bake for 20 minutes.
