Recipe for Salted Chicken and Bamboo Shoots Casserole

Step 1
Prepare bamboo shoots and salted chicken (I used half of a chicken) soaked in cold water in advance for a couple of hours.
Step 2
Cut the bamboo shoots into chunks or thick slices. Clean the chicken, chop it into desired size pieces. Prepare dried chili and ginger.
Step 3
Heat oil in a pot, stir-fry ginger slices and a few Sichuan peppercorns until fragrant.
Step 4
Add the chicken and dried chili, stir-fry until fragrant (I stir-fried for about 6 minutes).
Step 5
Add enough cold water to cover the chicken.
Step 6
Bring to a boil, add the bamboo shoots, boil again.
Step 7
Transfer to an electric rice cooker, I cooked it for 40 minutes.
Step 8
Before serving, add garlic sprouts. The salty and aromatic taste will instantly excite your taste buds. If possible, serve it in a dry pot and enjoy the ceremonial dining experience.
