Instructions for Lamb Hot Pot

Step 1
Heat the oil in a hot pan, fry the Sichuan peppercorn powder, add the lamb cubes and stir-fry, add spring onion, ginger, white wine and stir-fry.
Step 2
Add diced shiitake mushrooms, wild mushroom and stir-fry with dark soy sauce for 3 minutes.
Step 3
Add light soy sauce and stir-fry until fragrant.
Step 4
Add oyster sauce, tomato paste and stir-fry.
Step 5
Add the soaking water from the mushrooms, season with pepper, sugar, chicken stock, bring to a boil then simmer on low heat for 15 minutes.
Step 6
After 15 minutes, add diced potatoes and continue to simmer for 15 more minutes.
Step 7
Add celery, chives, diced tomatoes; thicken with cornstarch mixture.
Step 8
Pour the finished broth over the oatmeal base and enjoy.
