Ingredients for Juicy Meat Buns
Pork Belly 500g | Flour 700g |
Yeast 5g | Egg White 2 eggs worth |
Oyster Sauce 1 tbsp | Sesame Oil 1 tbsp |
Cooking Wine 1 tbsp | Red Onion 1 bunch |
Salt To Taste | Sugar 2 tbsp |
Vegetable Oil To Taste | Chicken Essence 5g |
Seasoning Water 250ml | Light Soy Sauce 2 tbsp |
Dark Soy Sauce 1 tbsp |
Recipe for Juicy Meat Buns

Step 1
Add sugar and yeast to flour with water heated to 40 degrees. Knead the dough and let it rise to double its size.
Step 2
Peel and wash the red onions.
Step 3
Peel and wash the pork belly, then chop and grind it.
Step 4
Finely chop the red onions, then fry them in hot oil until fragrant and golden. Add both raw and cooked red onions to the meat filling.
Step 5
Add cooking wine, egg white, sugar, light soy sauce, sesame oil, oyster sauce, chicken essence, and seasoning water to the meat filling. Mix for 5 minutes until all the seasoning water is absorbed into the filling.
Step 6
Roll the dough that has risen to double its size into a strip.
Step 7
Make small dough balls.
Step 8
Flatten the dough balls into round wrappers.
Step 9
Scoop the meat filling onto the wrappers and make buns of equal size.
Step 10
My shaping skills can only make 18 folds; more than 20 folds would be even better.
Step 11
Let the buns rise for 10 minutes, then steam over boiling water with a lid on for 15 minutes. Turn off the heat and let it sit for 3-4 minutes before uncovering.
