Steps for Making Jiaodong Xibing

Step 1
Add all the ingredients into a bowl. Dissolve the yeast, and warm the milk with hot water. Avoid high temperature, as it may kill the yeast and cause the eggs to curdle.
Step 2
Add the flour and knead into a smooth dough. Adjust the amount of flour according to your needs, knead until a slightly soft dough is formed.
Step 3
Let it ferment in a warm place until it doubles in size.
Step 4
Divide into small portions, roll into small dough disks. Let it rest until you can lightly feel the weight with your hand.
Step 5
Use an electric griddle without oil, keep it at the lowest heat setting, and flip it frequently. Once it changes color and is no longer soft in the middle, it’s ready.
