Homestyle stewed pork knuckles (simple version)

After buying the pork elbow, ask the seller to burn the skin surface, then scrub it clean at home. Cut it into small pieces, soak in cold water to remove blood.

Fill a pot with cold water, add the chopped pork elbow, green onions, ginger, and cooking wine, blanch the pork elbow to remove blood.

After the water boils, skim off the blood water from the pork elbow.

Transfer the blanched pork elbow into a basin of hot water, wash it repeatedly with hot water two times to remove blood residue on the surface.

Put the cleaned pork elbow into a pot, add enough boiling water to cover the pork elbow, and start stewing over high heat.

After the water boils, skim off any floating blood foam.

Prepare some seasonings: a few slices of green onions, three slices of ginger, two bay leaves, a small piece of cinnamon stick, and a proper amount of fennel seeds. If you don’t like heavy seasoning, use less. The main focus is on the meaty flavor. Add the seasonings directly to the pot.

After adding the seasonings to the pot, add half a spoon of soy sauce, a small spoon of dark soy sauce, a small spoon of MSG, and a small spoon of thirteen-spice powder. Stew over medium heat for 20 minutes.
