Recipe for Steamed Egg Custard

Step 1
Crack two eggs into a bowl.
Step 2
Use half an eggshell to add clean water, the ratio of egg to water is 1:1.5. Since it’s half an eggshell, it’s 1:3. So, for two eggs, add 6 half eggshells of water.
Step 3
Add half a teaspoon of salt and mix well.
Step 4
Use a sieve to filter out the foam.
Step 5
Use a spoon to skim off the remaining foam to make the surface clean and neat.
Step 6
Steam directly with cold water, cover with a plate on top. Some use plastic wrap, but I prefer a plate. Steam over high heat for 15 minutes.
Step 7
Smooth and tender steamed egg custard is ready, add soy sauce and sesame oil, you can also garnish with goji berries or chopped green onions…
