Recipe for Sauce Meat

Step 1
Soak the pork belly and ribs in water to remove blood, blanch in boiling water, then wash and drain the water

Seasonings: red rice flour, rock sugar, star anise, bay leaves, scallion, ginger, all in appropriate amounts

Heat oil in a pan, sauté scallion and ginger until fragrant over medium heat

Add the blanched meat, stir-fry to remove excess water from the meat

After frying off excess water from the meat, add star anise and bay leaves to bring out the fragrance

Add water until it covers the meat

Start seasoning: adjust the saltiness by adding salt, light soy sauce, and red rice flour, taste it to check the color, adjust the taste and color according to personal preference

Bring to a boil, reduce heat and simmer for 40 minutes, add rock sugar, then increase heat to reduce the sauce (about 10 minutes), be cautious not to let it dry out
