Recipe for Braised Beef

Step 1
After cutting the beef, soak it in water for two hours to remove the blood. Then boil the meat in a pot with spring onions, ginger, and cooking wine. Remove any scum that rises to the surface. Fresh beef does not need to change the water, so do not cover the pot for the time being.
Step 2
Wash the large ingredients to remove bitterness, then boil them in a pot.
Step 3
Add the large ingredients, dark soy sauce, soybean paste, salt, and bring to a boil. Reduce heat and simmer covered for two hours, then turn off the heat and let it rest for one hour.
Step 4
Remove the beef, roll it in plastic wrap, and refrigerate.
