Steps to Make Home-style Braised Eggplant

Step 1
Prepare the ingredients, finely chop the garlic, and thinly slice the ginger

Peel the eggplant and cut it into thick slices. Sprinkle with some salt, mix well, and let it sit for a while to release excess water. Squeeze out the water before cooking.

Mix soy sauce, sugar, salt, oyster sauce, starch, and warm water for the sauce. Adjust the taste according to your preference.

Cut the bell peppers, red bell peppers, and tomatoes into chunks, set aside.

Pat dry the eggplant slices, sprinkle evenly with starch, and coat well.

Heat oil in a pan, fry the eggplant slices until slightly golden brown. Remove from heat.
