Ingredients for Home-cooked Braised Pork Belly
Pork Belly: 1 Jin | Green Onion, Ginger, Garlic: Proper Amount |
Soy Sauce: Proper Amount | Dark Soy Sauce: Proper Amount |
Bay Leaves: 2 pieces | Sichuan Peppercorns: 5 pieces |
Star Anise: 2 pieces | Rock Sugar: A handful |
Dried Red Chili: 2 pieces | Cooking Wine: Proper Amount |
Vinegar: Proper Amount |
Recipe for Home-cooked Braised Pork Belly

Step 1
Slice the pork belly into large pieces, slightly thicker.
Step 2
Blanch the pork belly in cold water with ginger, cooking wine, and vinegar. Once the water boils and some foam appears, skim off the foam, rinse the pork under water, and set aside to drain.
Step 3
In a pot without oil, melt white sugar over high heat. Add a little water and let the sugar slowly melt. Once you see small bubbles forming, add the pork belly and stir-fry. After a while, add some soy sauce, then pour in hot or warm water. Add some Sichuan peppercorns, star anise, bay leaves, and cinnamon. Adjust the spices according to your preference. Cover with a lid and simmer.
Step 4
Once the sauce has reduced, check if the pork is cooked to your desired tenderness. If so, thicken the sauce on high heat. If the color is not dark enough, add some dark soy sauce for color. You may not need to add salt since there is salt in the soy sauce. Adjust the spiciness with more chili if desired. Remove from heat when ready.

Once the sauce has thickened, transfer the pork belly to a plate and serve.
