Ingredients for Guizhou Kaili Sour Soup Fish

Carp 720g Kaili red sour soup 350g
Pork lard 26g Tomato 300g
Green onion (I used garlic sprouts) 2 stems Garlic 5 cloves
Ginger 12g Bird’s eye chili 3
Dipping sauce: chili paste 8g Garlic 2 cloves
Sichuan peppercorn oil 5g Scallion 2
Coriander 2 Monosodium glutamate 3g
Salt 3g Light soy sauce 1 tbsp

Marinate the carp with salt and rice wine (I don’t like the taste of cooking wine) for 20 minutes to remove the fishy smell.
