Carp 720g | Kaili red sour soup 350g |
Pork lard 26g | Tomato 300g |
Green onion (I used garlic sprouts) 2 stems | Garlic 5 cloves |
Ginger 12g | Bird’s eye chili 3 |
Dipping sauce: chili paste 8g | Garlic 2 cloves |
Sichuan peppercorn oil 5g | Scallion 2 |
Coriander 2 | Monosodium glutamate 3g |
Salt 3g | Light soy sauce 1 tbsp |

Step 1
Marinate the carp with salt and rice wine (I don’t like the taste of cooking wine) for 20 minutes to remove the fishy smell.(Additional steps have been translated as above)
