Instructions for Garlic Soy Chicken Feet

Step 1
Boil the purchased chicken feet in water with ginger slices, cooking wine, and vinegar for 30 minutes. The vinegar helps the chicken feet lose collagen and makes them more tender to eat.
Step 2
Add light soy sauce to a small bowl along with white sugar. Mince the garlic and cut the lemon into pieces for later use.
Step 3
Soak the cooked chicken feet in cold water (this is a traditional method in Guangdong cuisine).
Step 4
Pour the soaked chicken feet into the prepared light soy sauce and minced garlic (you can also add your own marinated garlic).
Step 5
Heat oil in a pan, then pour the hot oil over the chicken feet and mix well.
Step 6
It is recommended to squeeze lemon juice and mix well (due to the hot oil, mix with lemon juice first, let it cool, then mix in the lemon pieces).
Step 7
After mixing in the lemon pieces, marinate for two hours before serving.
