Steps for Making Fuding Meat Slice Soup

Step 1
Put 200g of lean pork into a meat grinder, add iced water in three batches and mix. Choose high-speed mixing throughout the process. After three rounds of mixing, add some chicken stock and 4g of salt for seasoning, then add tapioca starch to the meat mixture and mix evenly (40g the first time, 20g the second time). The meat mixture is ready.
Step 2
