Ingredients for Homemade Dumplings
【Filling】 | Pork leg meat (3 parts lean, 7 parts fat) 250g |

Method for Homemade Dumplings

Step 1
【Filling】 1. Quickly cook the shrimp in hot oil, set aside half, and chop the other half into small pieces. 2. Chop the pork meat, add all the seasonings (salt, ginger paste, soy sauce, white pepper, thirteen-spice, etc.) and mix well to prepare the filling.
Step 2
1. Wash the greens and blanch them in hot water. 2. Grate the carrot and set aside.
Step 3
【Dough】 Mix 300g of plain flour with 180g of water in a mixer. Knead until smooth, cover and let it rest for 20-30 minutes.
Step 4
Mix the chopped shrimp with the prepared filling, then add the baby bok choy and carrot and mix well.
Step 5
1. Fill the dumpling skins with the mixed filling and add a whole shrimp, then shape into dumplings. 2. Boil in water until cooked, then remove.
Step 6
Serve with a dipping sauce of fermented vinegar and sesame oil.
