Recipe for Fern and Preserved Pork Stir-Fry

Step 1
First, wash the fern thoroughly, remove any tough roots, and keep only the tender parts. Then, gently scrape off the white hair and trim the flowery top of the fern. It may be a bit troublesome, but it is worth it for the delicious dish!

Next, boil water in a pot and blanch the fern. The blanching time should be short, just enough to remove the bitterness of the fern.

After blanching, drain the water and cut the fern into sections for later use.

Slice the preserved pork.

Heat oil in a pan, then add the fatty preserved pork and slowly fry until translucent. Once the fat turns transparent, add the lean preserved pork and fry together for a while. This will make the preserved pork more fragrant and crispy.

Then add minced garlic and dried red chili, stir-fry until fragrant.

Add the cut fern sections and stir-fry over high heat for a few minutes. The fern will gradually soften, at which point you can add a little soy sauce and continue to stir-fry. Since preserved pork and soy sauce are already salty, you usually do not need to add extra salt. However, if you prefer a stronger flavor, you can add a moderate amount.
