Dongpo chicken

Ingredients for Dongpo Chicken

Spring Chicken 500g Pork Belly/Pork Shoulder 180g
Sugar 2 tbsp Shaoxing Wine 500g
Spring Onion 1 stalk Ginger A few slices
Garlic 2 cloves Honey 1 tbsp
Pork Rib Sauce/Black Bean Sauce 1 tbsp Light Soy Sauce 5 tbsp
Oyster Sauce 2 tbsp Oil 3-5 tbsp
Black Pepper A pinch

Recipe for Dongpo Chicken

Prepare the ingredients: cut the pork belly/pork shoulder into large pieces, blanch with three slices of ginger; rinse the fresh half chicken to remove blood stains, peel two cloves of garlic, cut spring onion into sections, and slice a few pieces of ginger for later use.

Prepare the seasoning while blanching: 2 tbsp sugar, 1 tbsp black bean sauce/pork rib sauce, 1 tbsp oyster sauce, 1 tbsp honey, 5 tbsp light soy sauce, 500g Shaoxing wine.

Simple stir-fry: Heat a little oil in a pan, brown the meat, then remove it. Saute the remaining oil with spring onion, ginger, and garlic until fragrant.

Using a rice cooker: Place the sauteed spring onion, ginger, garlic, the remaining oil in the pan, pork belly/pork shoulder, and half chicken into the rice cooker. Add the prepared seasoning mixture, then cook using the normal rice cooking function.
