Recipe for Fried Small Crucian Carp

Step 1
Buy small crucian carp from the market, the shop has already cleaned them, clean them again, and I removed the fish heads for convenience.
Step 2
Cut ginger into thin strips, add a spoon of salt, then add cooking wine, remember to flip the fish and marinate it for 10 to 20 minutes.
Step 3
Put flour in a bowl, I like to coat the fish with flour when frying, this way it can get a cleaner coating.
Step 4
Pour oil into the pot, heat the oil until bubbles form when a chopstick is inserted.
Step 5
Coat the marinated fish with flour one by one, gently shake off the excess flour on top.
Step 6
The coated fish can now be placed in the pot.
Step 7
Place oil-absorbing paper on a plate, fry until both sides are golden brown, once all the fish are fried, heat the oil again and fry once more (I forgot to take a picture).
Step 8
This is the finished product, sprinkle with your favorite chili powder and enjoy, the fish fried this way even the bones are crispy.
