Steps to Make Cucumber, Egg, and Mushroom Stir-Fry

Step 1
Dice half a cucumber.
Step 2
Clean the mushrooms, wipe off any surface moisture, and slice them.

Crack two eggs, add a little white pepper powder, 1 tsp of water, and half a tsp of salt, then mix well.

Blanch the mushrooms briefly to remove oxalic acid, about 1 minute, then drain and set aside.

Heat oil in a pan, pour in the egg mixture, and lightly fry until set.

Once both sides are golden brown, gently cut into small pieces with a spoon and set aside.
