Method for Chestnut Coconut Milk Layered Water Chestnut Cake

Step 1
Steam the chestnuts until cooked, then dice them.
Step 2
【Chestnut Paste】 Mix 50ml water chestnut flour and 100ml water, sifting it twice to obtain the paste. Boil 100ml water, 50g brown sugar slices, then add 50ml water, boil and turn off the heat; While the sugar water is hot, add 1/5 of the paste, stirring quickly until thickened, then mix in the remaining 4/5 paste. Add in the steamed chestnuts and mix well.

【Coconut Milk Paste】 Mix 50ml water chestnut flour, 50ml coconut milk, and 50ml water, sift to obtain the paste. Boil 50ml coconut milk, 50ml water, 50g granulated sugar, then add 1/5 of the paste mixture, stir until thickened, then mix in the remaining 4/5 paste.
Step 4
【Steaming the Cake】 Place a 1-liter square bowl in the steamer, pour a thin layer of chestnut paste and steam for about 3 minutes until cooked, then add a layer of coconut milk paste and steam for another 3 minutes, repeat layering until all pastes are used.
