Steps to Make Celery Stir-Fried Shrimp

Step 1
Wash the celery, remove the leaves, and cut them into small pieces; peel and slice the carrot, then cut into thick strips and set aside.
Step 2
Bring water to a boil, add a little salt, and blanch the celery pieces in the water for 1 minute.
Step 3
The blanched celery pieces will have a greener color. Blanching the celery will shorten the cooking time later on and help maintain the fresh and crisp texture of the celery.
Step 4
Shell the shrimp and remove the vein. Marinate the shrimp in cooking wine for about 5 minutes.
Step 5
Heat a wok, add cooking oil, then add chopped green onions, ginger slices, and carrot slices. Stir-fry for about 30 seconds until fragrant.
Step 6
Add the marinated shrimp to the wok and stir-fry until the shrimp changes color.
Step 7
The shrimp will turn red when cooked, curl up into a round shape, then add a little light soy sauce and stir-fry evenly.
Step 8
Add the blanched celery pieces and continue to stir-fry evenly.
Step 9
Since the celery has been blanched, it doesn’t need to be stir-fried for too long. Add a little salt to season, stir-fry for about 1 minute, and the dish is ready.
