Braised Pork Trotters

Ingredients for Braised Pig’s Feet

Pig’s Feet 1 Light Soy Sauce 3 tablespoons
Dark Soy Sauce 1/4 teaspoon Rock Sugar 2 pieces
Salt 1/2 teaspoon Garlic 8 cloves
Ginger, sliced 5 slices Sichuan Peppercorns a small handful
Cinnamon Stick 1 small piece Star Anise 1
Bay Leaf 1 Spring Onions 2 stalks
Dried Chili Peppers 3

Recipe for Braised Pig’s Feet

Step 1 for Braised Pig

Step 1

Clean the pig’s feet, put them in cold water with spring onions and ginger. Bring to a boil, skim off any foam, then drain the liquid. Rinse the pig’s feet in fresh water, return to the pot, and cook for half an hour.

Fry 2 slices of ginger and 8 cloves of garlic until fragrant, then add to the pig’s feet.

Sauté Sichuan peppercorns, cinnamon stick, bay leaf, and dried chili peppers in a pan.

Transfer the spices to a seasoning bag, add 3 tablespoons of light soy sauce, 1/4 teaspoon of dark soy sauce, 2 pieces of rock sugar, 1/2 teaspoon of salt. Cook for half an hour, then let it simmer for another half an hour.

Boil and peel eggs, add them to the braised pig’s feet and let simmer for over an hour. For best results, refrigerate overnight and enjoy the next morning for breakfast.
