Recipe for Braised Chicken

Step 1
Choose a locally raised free-range chicken, slaughter it, chop the chicken meat into small pieces, wash it and drain the water.
Step 2
Add soy sauce, local cooking wine, a little salt, and ground pepper. Stir well, add dried chili segments, and marinate for 15 to 20 minutes.
Step 3
Pour the marinated chicken into a hot oil pan, add ginger slices, garlic cloves, star anise, and bay leaves to fry until fragrant. Add a suitable amount of mountain spring water, cover the lid, and simmer over medium-low heat. Then add a suitable amount of salt and a little ground pepper to season until the broth thickens. The broth of the braised chicken can be slightly more, very delicious when mixed with rice. Finally, add the tender green onion sections and serve.

The braised chicken is well cooked, with tender and golden meat pieces, the broth resembling coffee gently swirling. When eaten, it is oily but not greasy, with a unique flavor that truly arouses one’s appetite.
