Recipe for Boletus edulis and Fava Beans

Step 1
Freshly peel fava bean pods
Step 2
Peel the fava beans from the pod, then remove the outer soft skin, leaving only the tender fava beans. Rinse the dried Boletus edulis with water and soak for 30 minutes, absorbing water and becoming thick and soft, then dice. Slice the green onion

Boil water in a pot, add a few drops of oil, put in the fava beans and cook for 1 minute, remove and rinse with cold water, then drain the water

Add 2 tablespoons of oil to the pan, add the green onion, fry over low heat until golden brown, remove the green onion, leaving only the oil in the pan

① Add the diced Boletus edulis, stir-fry to bring out the aroma

Add the blanched fava beans, stir-fry over medium heat for 2 minutes, pour a small amount of the soaked Boletus edulis water midway to keep the pan moist
