Recipe for Bean Pancakes

Step 1
Heat the wok, add cooking oil, stir-fry scallions and ginger; if you like it spicy, you can add some dried red chili here;

Cut the pork into slices and stir-fry in the pan until it changes color. It is recommended to use pork with both fat and lean, preferably pork belly with some fat for a more flavorful dish;

After the pork slices change color, add soy sauce, a little oyster sauce, and red-braised soy sauce, stir-fry for 3-5 minutes to let the pork absorb the flavor and color; if you have soybean paste, you can use it instead of oyster sauce for a richer taste.

Remove the ends and strings of the cleaned green beans, break them into small pieces and add them, as well as the corn and carrot cut into small pieces, stir-fry evenly;

Peel and cut the potato into dice, and add it to the pan;

Stir-fry evenly, continue heating and stir-fry for about 3 minutes;

Add boiling water, bring to a boil, cover the pan, simmer on medium-low heat for about 10 minutes;

Knead a piece of dough in advance, this dough has a higher water content, about 200g of flour, 130g of water, mix into a sticky dough, cover with plastic wrap to rest for 20 minutes, then knead into 6 small dough balls, roll them round, brush some oil on the surface, put them in a plate, cover with plastic wrap to keep moist, and set aside;

When the ingredients in the pot are almost cooked, set aside a bowl of broth, take out the dough and stretch it into a thin pancake, which should be thin and soft for better texture;

Place the stretched dough in the pan, covering the ingredients. Pour the previously set aside broth over the pancake, cover the pan, simmer on medium or high heat for about 5 minutes;

When the pancake is fully cooked, remove from the pan, and it’s ready to be served.
