Stir-fried spring bamboo shoots with rice cake, a dish that tastes of the delicious fresh flavors of spring in Zhejiang.

Recently, I bought a type of spring vegetable commonly eaten in the south, called cǎo tóu. It looks small, cute, and bright green, much like clover!
A friend recommended the Ningbo cooking method, so I tried stir-frying it with rice cakes.
You can use fresh strips of pork or small wax sausages, along with fresh and tender bamboo shoots. Seasoning is also very simple, basically just using "sea salt + light soy sauce", letting the flavors of the ingredients shine through freely.
The results were pretty good. Although the label on the packaging indicated that cǎo tóu was originally used to feed horses, the tender shoots in spring are really delicious!
Besides, it’s not expensive. For 9 yuan, I ate two meals. If the vegetable market has it, buy some and try it out. It’s quick!
