Yunnan grass shoots, scientific name Typha angustifolia, also known as ivory vegetable, have high standards for growth environment. Currently, they can only grow in Jian Shui, Yunnan. Once away from the water surface, they will oxidize upon contact with air, turning black, yellow, and old, no longer fresh.
Their effects: clearing heat and reducing fire, nourishing blood and invigorating Qi, diuretic and reducing swelling.
Note: It is not suitable for those with weak spleen and stomach to consume.
Yunnan people have very strict requirements for the freshness of ingredients. Buying vegetables in Yunnan is like attending a popularization session, the love for nature comes from innate genes. There are few cuisines in other places, especially in Yunnan’s vegetable markets where minority groups gather. There is nothing you cannot buy if you don’t know about it. A trip to the market will teach you botany, medicine, mathematics, agriculture, history, biology, chemistry, geography, language, English, and other subjects.
Therefore, locals often take their children to the market on weekends to buy groceries, and they also learn these subjects. It’s not just as simple as buying groceries.
